At the end of the song Rain Man, Eminem clearly says he "did a whole
song and I didn't say shit." But here are at least two instances of the
word shit:
"...offensive. Shit, this is the same verse..."
"...end this shit now cause I won't stand..."
Can someone please explain this to me, as I'm very confused.

He probably meant that the song had no real substance. You know, as in "I
didn't say shit to that guy", meaning "I didn't say anything to that guy".
It's one of those goofball songs that makes me like Eminem so much.

Different meanings, interpretation is key.
"did a whole song and didnt say" shit is a noun. (A small or worthless amount)
"...offensive." shit is Interjection (Used to express surprise, anger, or extreme displeasure)
"...end this." shit is noun (Trouble or difficulty ie censorship)
I failed english about 25 years ago.YYMV
Not as literal as...

I wouldn't say "fuckin" for six minutes"
